Blueberry Muffin No Bake Energy Balls

  • 1 cup Old fashioned oats (dry (use gluten-free oats))

  • 1/4 cup SunButter (or other nut/seed butter)

  • 1/4 cup Honey

  • 1/2 cup Dried blueberries

  • Dash of Salt

  • 1/4 tsp Cinnamon

  1. In a medium bowl, add all of the ingredients and stir to combine well. The mixture should be a bit sticky.

  2. Refrigerate for at least 30 minutes.

  3. Use a spoon to scoop about 1 tablespoon of the mixture into your hand. Roll into a ball. Repeat with remaining mixture.

Store in an airtight container in the refrigerator for up to a week or freeze for longer storage.
